FUN FACT:
In traditional Chinese winemaking, glutinous rice, water, and yeast derived from wheat are fermented to create "yellow wine," also known as "shaoxing rice cooking wine."

In the eastern Chinese province of Zhejiang, Shaoxing, is where it must be made. In Chinese cuisine, it is frequently used as both a cooking wine and a beverage. It is well recognized and respected all over mainland China, Taiwan, and Southeast Asia.

PRESERVATION METHOD:
The aged kind of saoxing wine can be kept fresh for up to six months provided it is bottled and kept in a cool, dark location. If you won't be using it frequently, you can keep it in the refrigerator. You don't need to refrigerate Shaoxing cooking wine. Just remember to keep an eye on the expiration date when storing in the pantry.
